Cauliflower Salad

Raw cauliflower has a wonderful nutty taste, perfect grated into a salad for a little crunch!

Raw cauliflower saladTo make the most of the freshness of our beautiful home-grown cauliflower, I grated some of the raw florets and their stems into a bowl, along with chives and mint from the garden, the juice of a satsuma, a little olive oil, grated carrot, diced pepper, diced dill-pickled gherkins, and seasoned lightly. Served with a little cold roast chicken, it was a lovely light way to enjoy our garden harvest!

    • It would stand up well without the addition of chicken too, packed with plenty of flavour. Shame raw cauliflower is often overlooked as a salad ingredient.

    • Crunchy roast cauliflower and broccoli sounds good too. Besides the ubiquitous cauliflower cheese which I am resisting so far, it’s a very versatile vegetable: raw, roasted, steamed, curried, braised in tomatoes Greek-style…
